‘Mater & Cuke Salad: Use It Up Side Dish
Running out of summer side dishes? Usually by this time in August I begin to feel like I have exhausted every last summer veggie and fruit combination possible. Sometimes though, it seems like the best recipes are the ones that have been staring me in the face. They are easy, quick, and with ingredients that have literally been sitting on my windowsill for the last two months.
That’s kind of like this tomato cucumber salad we had with dinner the other night. I mean, it’s so classically simple I don’t know how I haven’t made this all season long. Oh well, regardless, it’s a great use-it-up side dish recipe that is great served with just about everything.
‘Mater & Cuke Salad
3-4 cups chopped tomatoes -- any variety. (We used a mix of grapes, Romas, & heirlooms)
1-2 cucumbers, chopped into quarters
2 tablespoons white balsamic vinegar
1 tablespoon EVOO
chopped basil
kosher salt, to taste
fresh groundd pepper, to taste
optional: feta cheese (didn’t have any of this, but it’s really good sprinkled on top)
Toss all ingredients together. Chill for at least one hour. Serve cold.
