Today, we were visiting my sister-in-law, Anastasia, and her husband, Michael, and they whipped something so tasty I just had to share. Of course, they too are signed up to receive a box from Washington’s Green Grocer so it was fun to see what they decided to do with this week’s produce.
So in addition to serving us some yummy potato and cucumber salad with yogurt dressing (an awesome Use-It-Up dish if I ever had one!) they also gave me my first BKT experience -- a bacon, kale & tomato sandwich. Who needs lettuce??? It was delish and hey, any way to sneak in kale into my diet is A-OK in my book. And with bacon? Yes, sir!
Usually, every summer I eat about 40,000 BLTs poolside, beachside, or barside, so I am happy to report there’s a new ingredient in town to include in my summer sandwich rotation -- kale: food of the gods!
There's no particular recipe, just replace your usual lettuce with kale and feel free to get creative!
