Who doesn’t love a date with bacon? Yes, you and bucket of bacon alone in a movie theater or walking hand-in-hand down the beach sounds pretty darn romantic, but I’m talking about a date date...the like the yummy medjool kind.
Wrap some thick cut bacon around a pitted halved date and you literally have a match made in heaven -- and a nice fall appetizer. I tried these the other day stuffed with two kinds of cheese I had rolling around my dairy drawer -- a little leftover Stilton and some Firefly Farms Allegheny Chevre. The goat cheese was waaaaay better, if I do say so myself, and didn’t melt all over the place like the Stilton did.
Give ‘em a whirl, this snack is packed with fiber so don’t even think twice about the bacon. Or at least that’s what I told myself after eating at least twenty.
A Date with Bacon...and Chevre
Medjool dates, pitted and halved 4 ounces or so of goat cheese bacon, strips cut in half
After pitting and halving your dates (which is really easy, by the way), stuff each half with a little cheese. Wrap with bacon. Bake in the oven at 375 until the bacon is crispy. Enjoy!
