Easy Like...Sunday, err, Monday Morning Yogurt Pancakes

These yogurt pancakes are so easy they don’t need to be saved for the weekend. They’re perfect for even a Monday -- which is the best time for us to have them since we are virtually out of every other breakfast food in the world come Monday morning. In fact, on this day, it's slim pickens round these parts since we get our WGG delivery on Tuesday.  However, things I always seem to have are yogurt, assorted flours, and at least a couple eggs. So that’s basically halfway to pancakes!  

A few weeks ago my friend Ingrid kept telling me I had to try the Greek yogurt pancakes that were sweeping the food blogger world. Honestly, I don’t know what took me so long. Granted, this is not a recipe using Green yogurt, but rather my own take, but they turned out darn good.  I never would have thought to add yogurt to pancake batter but these were probably the only flapjacks I've ever made (as in, my entire life) that turned out perfect.  I was stunned, frankly.

I also like the fact that even though my kids were eating pancakes they were also at least getting some protein and calcium.  They loved helping make the pancakes; and FYI, Tabby isn't flipping the bird here, but eating some batter...

Here goes: easy, fluffy pancakes -- perfect for any day of the week!  

YOGURT CINNAMON PANCAKES

makes about 10 small pancakes (I should have made a double batch...kids ate 4 pancakes each...leaving only 1 for Grey and 1 for me)
1 cup whole milk plain yogurt (I used Seven Stars)
¾ cup white whole wheat flour (Daisy brand -- the best!! Makes everything so fluffy)
¼ spelt flour (again, the organic Daisy kind)
1 tsp. vanilla
1 tsp. (or so) cinnamon
½ tsp. baking soda
1 tsp. cream of tartar
1 Tbsp. sugar
½ tsp. salt
2 eggs
1 Tbsp. melted butter or melted coconut oil or even organic canola or other oil
butter or oil for hot skillet or griddle

Mix dry ingredients into a mixing bowl.  Stir in (I just used a whisk) remaining ingredients.  Pour onto a hot griddle (I actually used a bit of coconut oil to prevent sticking on my cast iron skillet).  Flip when bubbles begin to appear on the pancake.  They are done when golden brown.  Top with a bit of butter, maple syrup, or confectioners sugar. Or fruit!  That would've been good...if we had any left!  Peach pancakes, anyone?!

And see -- fluffy!  This was shocking because my last batch of pancakes -- made with another recipe -- turned out about as light as a steel frisbee.   We did have fun practicing our discus throw through...
