Last night, in between wasting time on Facebook, People.com, and Dlisted, I stumbled upon something intriguing on Pinterest: Pickle Dip. I thought about it all night. I had dreams about it. And today, around lunchtime, I just couldn’t take it anymore. I had to try my hand at this dip with my Brooklyn Brine Hop Pickles.
And? Wow. Thirty seconds after it was made...it was gone. My husband happened to stop home for lunch, which basically consisted of a bag of crinkle cut potato chips and this dip. By the end, we were scooping it with our fingers and fighting each other over who got to lick the bowl. Well, not really, but we were eating it like total hogs. Hopefully soon, you can too. Sometimes, it’s so good to be bad!
Hog Wild HOP Pickle Dip
one 8 oz. pack of cream cheese, room temperature about 1 cup diced pickles (the Hop Pickles were awesome in this...I even diced up a few of the carmelized onions in the jar and threw those in...wowza) ¼ sweet onion, finely diced salt, to taste (I used red Himalayan so that’s why my dip is kinda pink) ½ teaspoon dried dill 2 tablespoons pickle brine
Mix all the ingredients up. Restrain yourself from eating it with a spoon. Serve with cut up veggies or chips.
