Sooo...once they are nicely pickled, what do you do with them? I am never sure what to do with pickled things........

In the simple version: Why do you boil them? I make all my fermented or pickled vegetables raw and keep the enzymes vitamins etc live and healthy. Your fancy version seems to be raw. I do like your choices of spices and the flowers. I think that caraway seeds, cumin seeds, and tumeric or ginger would also do well.

Hi there! You don't boil the scapes in either recipe, you just boil the vinegar/salt mix. You'll see that the scapes are just stuffed into the jars in their raw state. Hope you give it a try!

I love this! Do you add the flowers to the pickle? I have been making all kinds of pickles (beets and spring garlic, beet greens and curry, mixed vegetables, ect.) but I have read your recipe and I think I have to add a little water to my vegetable pickle and maybe a few more herbs to get the recipe just right.
