Spicy Green Beans and Tofu
Mmm, sniff, sniff...do you smell the goodness? It's AMAZING. This combination of aromas is so intoxicating...I'd call it Love Potion #8! This is an easy dish to cookup as it's essentially a stir-fry. Here are the beautiful ingredients:

And the recipe -
1 1/2 pounds green beans, trimmed
2 tablespoon peanut oil
1 tablespoon toasted sesame oil
1/2 pound or so (however much you like) firm tofu cut into 1/2 inch cubes
1 tbsp. grated, peeled ginger
3 cloves garlic, minced
a biggish pinch of red pepper flakes
Juice of half a lemon
2 tablespoons tamari or soy sauce
2 tbsp. Sweet Chili Sauce
Top and tail the beans and and cut into 2 inch lengths. Heat a wok, large skillet, or what I use -a large enamel cast iron pot - over medium high heat. When the pan is hot add the oils and heat until just before the smoking point...the oil will start to shimmer. Add the tofu and stir-fry until it starts to turn golden brown. Add the ginger, garlic and red pepper flakes and cook a minute to let the fragrances dance around, then add the green beans and stir-fry for about 4 minutes. Add the soy sauce, sweet chili sauce and squeeze in the lemon juice. Cook, stirring, until liquids reduce slightly and the beans and tofu are glazed. As you can see in the picture below, you'll have a spectacular slurry of delicious bits on the bottom of the pan...make sure you scrape it all out with the beans and tofu...it's the "magic". Enjoy!
