Citrus Avocado & Crab Salad

Citrus and avocados -- a match made in heaven! We're talking Vitamin C meets Omega-3s and holy heck, does this perfect couple of the fruit world taste delicious. I recently made this with my grapefruits and oranges that I brought down to Key West with me as my carry on bag (yes, they probably went from Florida to Delaware and then back to Florida) but wow...it was so good. Topped it off with some local crab (totally optional) and this pretty salad may be my new fave.

The whole thing, start to finish takes about five minutes to assemble. It may take even less to consume. Enjoy!

Citrus Avocado & Crab Salad

one or two pink grapefruits, supremed and divided into segments (learn how here)
one orange, supremed and divided into segments
2 avocados, pitted and peeled and cut into 1/2 inch slivers
mixed greens (couldn't help but think pea shoots this spring will rock this salad)
salt & pepper, to taste
3 tablespoons olive oil
juice of half a lemon
1 cup fresh lump crabmeat

Spread your greens, top with avocado and citrus wedges. Whisk olive oil with lemon juice and salt and pepper. Pour overtop. Toss. Serve immediately.
