Katharine Mardirosian started 100 Bowls of Soup in 2009 with the idea of sharing nourishing, wholesome, homemade soup with friends and neighbors. Since then it has been a journey of discovery -- learning about the many local sources of fresh ingredients, developing relationships with farmers, experimenting with vegetables, adapting new recipes and gathering valuable feedback from soup enthusiasts near and far. Throughout it all, her goal has remained steadfast -- to create the freshest, healthiest, most flavorful soup using the finest seasonal ingredients available from local, organic and sustainable farmers.
Much of the produce used to create the soups are from local farms like those in the Tuscarora Organic Growers Coop in PA, Potomac Vegetable Farm in Virgina and the Maple Aveue Market Farm. Her Chicken Stock is made from Polyface Farms pasture raised chicken. All of the soups are gluten-free.
Here's the best part - all of the soups are low in salt and low in fat (less than 200 mg of salt and less than 4g of fat per 8 oz serving). The chicken and beef stock (made from grass fed local animal bones) and our classic vegetable stock, have no added salt. They use only olive oil, less than one teaspoon per 8 oz serving. When the ingredients are fresh and flavorful, few are needed! We love that you can start with a soup and tailor it to your family's desires! For example, Mom might love the Fall minestrone straight up, but by adding a few cooked noodles for the kids or a couple meatballs and noodles for a heartier meal, you really can make everybody happy starting with one container of soup!
