Light and just right for a vegan main course that will please everyone's palates. AND it couldn't be easier!
Preheat the oven to 375 degrees. Cut a medium sized cauliflower int 1-inch thick slices. In a large cast iron pan, add 1/2 cup of avocado oil and heat until it starts to shimmer. Season each side of the cauliflower "steaks" with salt and pepper and pan fry each side for about 5 minutes until golden. Slice a blood orange into 4 or 5 slices and lay the slices in pan and over the cauliflower. Toss in some chilies if you have them and if you want them. Put the pan in the oven and finish them off for another 10 to 15 minutes until tender all the way through. We served this combo with a drizzle of our favorite detox vinaigrette. You can make them without the oranges...sometimes we add kalamata olives and fresh thyme and then crumble feta cheese on them before going in the oven. Delicious!!
